Cherry Bomb Granola
This past weekend I had a few minutes of couch time and popped on the Food Network, I can't remember who was making granola but I did decide I needed some in my life...stat! So Monday morning, during my normal grocery shopping hour, I picked up the ingredients at Trader Joes to make my own version of what I saw on TV. The problem with a lot of granola (for me at least) is that it's packed with sugar and a lot of nuts I am allergic to. So I decided that I would wing it and hope for the best! My recipe uses honey instead of sugar, and more seeds than nuts. I also added cinnamon and almond extract for a little bit more flavor!
Colleen's Cherry Bomb Granola Recipe:
4 C of old-fashioned oats
1/2 C of slivered raw almonds
1/2 C raw pumpkins seeds
1/2 C raw sunflower seeds
1/3 C honey (local if possible)
1/4 C oil (I used sunflower oil)
1 tablespoon of Cinnamon
1 teaspoon of almond extract
1 C un-sulfered Cherries
Mix everything together except the cherries, pour on a baking sheet and bake at 300 degrees for 18 minutes or until golden brown. Cool to room temp, then add the cherries. It should stay fresh in a sealed container for one week.
