Meals Under 500 Calories, Healthy & Hearty!
Meals under 500 calories that will make your taste buds and your (flat) belly, happy!
I was able to create two meals by cooking one dinner. Both meals were created around grilling some pork loin, "Greek Style" which is pork loin chunks on skewers with salt, pepper and oregano.
First, I grilled three pork loins & 3 sweet potatoes, that is all I grilled. Then I made a simple Near East Couscous on my stove. Easy! All the other ingredients were jarred or fresh fruit/veggies.
My first meal for dinner that night was Greek pork, sweet potato and an antipasti salad.
From there I created three extra meals for the week. I omitted the sweet potato for the extra meals because I assumed it would be my lunch and I didn't feel the need for a super heavy lunchtime meal.
My second meal was a Strawberry Couscous Salad with the pork loin on top. My husband and I both loved this salad! It was crunchy, sweet, tart, and meaty! Strawberry Couscous Salad-442 calories
1 cup of raw spinach
1/4 cup of roasted unsalted pistachios
3 oz of pork loin
1/2 cup chopped strawberries
1/4 cup of cook couscous
1 tsp olive oil
1 tbsp of balsamic vinegar
Greek Pork with Antipasti Salad-430 calories
4 oz grilled pork loin
1 oz fire roasted red pepper
1/3 cup of chick peas
1/2 cup of marinated artichokes
1/2 grilled sweet potato (as a side...not part of the salad)
